  1. Season beef on both sides with salt, pepper, paprika, and garlic powder.
  2. Heat coconut oil in a large nonstick skillet until hot; brown beef on both sides.
  3. Cut onion into thick slices and separate into rings. Place onion rings in bottom of a slow cooker crock; lay the beef on top.
  4. Stir together water, tomato sauce, and vinegar; pour over meat. Cover and cook on low 6-8 hours.
  5. Remove meat from cooker. Slice thinly. Serve topped with onion rings and sauce.
